amazing, simple, peach cake

What would you do with two peaches left in the fridge? A cake, of course! This cake was a real surprise to me, kinda successful experiment. Even better than apple cake.

peach cake

  • 1 cup and 1/2 all purpose flour
  • a little less than 1/2 cup sunflower seed or corn oil
  • almost 1 cup sugar
  • 15 g baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspon lemon extract
  • 1/2 cup non dairy milk (I had rice)
  • 3/4 cup plain soy yogurt
  • confectioner's sugar for topping
Do it the simple way: mix together flour and baking powder. Use another bowl to mix together sugar, yogurt, oil, extracts and milk. Pour the liquid part into the dry part and combine until smooth.

Grease and dust a pan with flour, put the batter in it and push thin slices of peach into the batter, making circles (okay, I know it ain't clear so just look at this picture or do it your own way).

Bake for about 30-40 minutes in preheated oven at 180°C. Let cool to pull the cake out and sprinkle with confectioner's sugar.

Some crème anglaise and vanilla ice cream would match it perfectly.
