cupcake invasion

veg* orange cupcakes with orange pudding

ingredienti x 12:

crema (o meglio, budino) all'arancia:
  • 3/4 cup di latte vegetale
  • 1/2 cup di succo di arancia
  • 3 cucchiai di amido, fecola o simili
  • 1/4 cup + 2 cucchiai di zucchero
  • 1 cucchiaino di estratto di vaniglia
  • 1/8 cucchiaino di curcuma (per il colore)
  • 1 cucchiaino di scorza di arancia grattata
cupcakes:

English:

Blogging using two languages is starting to become kinda annoying (even if I just begun), especially when it comes to translate each single word (and in fact I never translate anything). I should start blogging just using English..who knows if Italians may understand a word?

Or maybe I'd just stop blogging..it ain't my thing anymore, I became old and misanthropist ahah.

**recipe later**

I'm sure I still don't have so many impatient English-speaking readers.

edit:

recipe makes 12 orange cupcakes:

orange pudding:
  • 3/4 cup non-dairy milk (I used rice)
  • 1/2 cup orange juice (best if freshly squeezed, but I didn't have it and used boxed one)
  • 3 tbsp cornstarch or something close to it (even flour may work, but takes longer to get cooked)
  • 1/4 cup + 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1/8 tsp turmeric (to enhance color)
  • 1 tsp orange zest (I didn't have it so I used same amount of orange marmelade)
cupcakes:
  • 1/3 cup oil
  • 3/4 cup sugar
  • 3/4 cup non-dairy milk
  • 1/2 cup orange juice
  • 1 tsp vanilla extract
  • 1 cup e 1/3 all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp orange zest
Mix together milk, juice, starch, sugar, vanilla and turmeric in a small pan with heavy bottom. Cook the mixture, mixing it until it becomes a thick pudding. Turn off the fire, add the orange zest and let cool the cream at room temperature.

Now prepare the cupcakes: preheat oven at 180°C; mix oil, sugar, juice, vanilla and 1 spoon of flour. In another bowl sift together flour, baking soda, baking powder and salt. Add the dry ingredients to the wet ones and mix until very smooth, the add the orange zest and mix again.

Put paper liners in a muffin pan and fill them 3/4 full, bake for 20 minutes.

Allow to cool completely and begin with filling and frosting: using your finger dig a hole in the middle and push on the sides to create room for the cream. Using a pastry bag fill the cupcakes with the pudding. You can frost them spreading a thin layer of orange marmalade and decorate using a pastry bag with star-tipped nose and chocolate ganache, or just using the pastry bag filled with orange pudding -as I did, see picture-. If you want to use the pudding frosting, just remember to double the pudding.
