Temevo fosse fagioloso, invece è tutto sommato buono, specialmente coi cornflakes.
Aggiungere l’aroma e frullare ancora. Mettere in frigo a rassodare.
I've been thinking a lot about soy yogurt: I've always wanted to try it but I was sincerly afraid to spend 3 euro to find out that it tastes like "bean" (as many soy "milk" products do over here). I was surprised to notice it is really similar so dairy yogurt, and I liked it a lot but kept a little to try one of the VCTOTW's recipes.
These are incredibly good: I think I finally found out why the world is filled with cupcake-lovers. Of course, I'm not posting the pic twice, but I'll translate the recipe even if I think that any person living in a English speaking western country can get easily the whole book.
ingredients (makes 12 cupcakes, but I made 6 to try):
- 1/3 cup oil (it said canola, but I think it's kinda prohibited for humans in Italy or something like this so I used corn oil);
- 3/4 cup brown sugar
- 1/2 cup soy yogurt
- 2/3 cup non dairy milk
- 1 tsp vanilla extract (I didn't have any so I skipped this point)
- 2-3 tbsp instant expresso powder
- 1 1/4 flour
- 1 tbsp cocoa powder (the unsweetened one, I used fair trade and organic one)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
Preheat oven to 350°F (180°C). In a bowl whisk together all wet ingredients adding espresso powder and mixing until smooth. Sift in dry ingredients and mix until well combined.
Put in paper liners (in a muffin pan) filling them 3/4 full and bake for 20 minutes (be careful to not overbake, they must stay a little bit moist). Let cool completely before filling and frosting.
espresso pastry crème:
- 1/2 cup non dairy milk
- 1 tsp powdered agar or 1 1/2 tbsp agar flakes
- 4 tsps arrowroot (never heard about it in Italy: I used flour, it came out well)
- 6 ounces silken tofu (it said extra firm, but I had soft and it worked very well)
- 1/3 brown sugar
- 1 tbsp expresso powder
- pinch salt
Pour 1/3 cup of milk in a small saucepan, add agar and bring to boil. Let cook for about 4 minutes.
Whisk arrowroot into the remaining milk, pour it in agar misture and stir, cooking it for about 1 minute or less, until very thick. Remove from heat and set aside.
Using a blender, mix together tofu with all the remaining ingredients (including the arrowroot-agar mixture) till creamy. Put in refridgerator to chill and firm up.
chocolate ganache:
- 1/4 cup non-dairy milk
- 110 g semi-sweet chocolate, chopped
- 2 tbsp maple syrup (I used rice malt)
Simply bring the milk to a boil and add chocolate and sweetener. Mix well until smooth and set aside at room temperature.
..the fun part!!
Use your finger to dig a hole inside you cupcake: do it very carefully, almost reaching the bottom and pressing the sides to get some extra-space for your filling. Fill the cupcakes using a pastry bag (I used a thin and long nose, similar to a very large needle). Frost the cupcakes using a star-tipped nose: you can use either remaining expresso crème or the chocolate ganache. You can put vegan cookie crumbs, chopped almonds or chocolate, chocolate covered coffee grains or something else on top to make your cupcake look nicer.
