mea culpa

I am a bad blogger, I am a bad blogger. I know I am.

But I have a great excuse for my terrible behavior: stuff like 1300 pages to be studied in time for January's exams.

One thing I particularly hate about Italian education system is that the largest part of our exams is oral: it means that you have to sit (stand, when in high school) in front of a teacher (or worse, in front of a terribly mean assistant) and answer his/her questions. No written tests, almost never (I had two, but just because they involved maths).

This hateful habit makes things awful if you are a shy person (and I do am a shy one, really shy when it comes to have someone in front of me who is judging) and usually I find it pretty hard to go there, even when I've learned every single word in my books..SO I'm still ending my second year's exams while I should almost be out of my university (shame on me).

And this is mainly why my thoughts are rather about law, history and philosophy than about blogging and taking pictures to delicious food.

By the way, a simple recipe for a fast vegan lunch!

seitan scaloppine and mashed potates

seitan scaloppine:
  • thinly sliced seitan (as much as you want: I usually make my own, cut it in slices and freeze it and put it in hot vegetable stock to un-freeze it);
  • all purpose flour;
  • olive oil;
  • vermouth or marsala wine;
  • salt.
mashed potatoes:
  • potatoes;
  • margarine;
  • non-dairy milk.
First of all peel and cut in cubes your potatoes and cook them in water until they are soft. While the potatoes are cooking you can dredge the seitan in the flour, shaking off the excess. Put a large pan on heat, add some oil and when it's hot put your seitan in it. Cook it for a coupla minutes, until it becomes a little brown and pour in about a glass of wine. Cook for some minutes more (like 2 or 3 each side), salt to taste. Drain you potatoes and mash them using a fork adding some milk and one or two tablespoons margarine. Salt to taste and serve.
